Substitutions for the eggs
If you love the nest idea but cannot get the candy we used for our mini eggs, here are a few ideas for substitutions.
In the recipe video and recipe, we use Smart Sweets Jelly Eggs. I have also used Russell Stover Sugar-Free Candy Coated Peanuts. I like them for their brightly coloured appearance. If you have a nut allergy, you could use, Sugar Free Jelly Belly Jelly Beans.
Make your own chocolate eggs – Using a silicone mini egg mould, pour in some melted white chocolate and let the eggs set. Easy Peasy! For coloured eggs, add a bit of food colouring (gel or paste) to the melted chocolate before making the eggs.
Fruit – Berries, such as small strawberries, blueberries, mulberries, raspberries, cranberries and Goji berries make great substitutions for the candy eggs.
Storing and Freezing Recommendations
Store the sugar free Easter nests in an airtight container refrigerated for up to 5 days.
Our Easter Nest cookies can also be frozen. Freeze without eggs, in an airtight container or wrapped in plastic wrap for up to one month.

Sugar Free Easter Nests Recipe
Ingredients
- 1 1/2 cups Unsweetened shredded coconut
- 3/4 cup Lily's Semi Sweet Sugar Free Chocolate Chips
- 16 Sugar Free Candy -Eggs
Instructions
- In a microwave safe bowl, melt the chocolate.
- Add the coconut half at a time, stirring to make sure the cococnut is well coated.
- Scoop the mixture into 8 mounds on a parchment lined tray.
- Using your fingers, form a nest shape.
- Press 2 sugar free candy eggs into the center of each nest.
- Chill for 2 hours, to allow chocolate and coconut to set.
- Enjoy!
